Exceptional Crémant rosé, with Golf again. Roche Lacour’s accomplished winemaker Viviane Gianesini works her magic beneath the cool hills if Limoux. Here, the monks of Saint Hilaire are said to have mastered sparkling wine methods in 1531, many years ahead of Dom Pérignon of Champagne fame. Their early success remained a local secret due to fragile bottles that didn't travel well. This appealing pink gains its salmon hue through the gentle pressing of Pinot Noir grapes – just like the finest Champagnes.
