The Wine
Sauternes is so famous it’s practically a byword for dessert wine. And if you’re looking for the perfect end to a special dinner, open a half bottle of Château du Hayot. This superb, family owned, Second Growth estate was named Château Romer until acquired by the du Hayot family back in 1851. At that time the new techniques of Sauternes production were just being discovered, and it’s fair to say the du Hayots contributed to the development of this much admired wine style. It’s crafted with grapes affected by Botrytis, a moisture sapping mould that causes affected fruit to yield sweeter, more complex, intense flavours while retaining a linear backbone of crisp acidity.
