With family roots in the wine estates of Burgundy and Beaujolais, winemaker Laurent Guillot could have remained in this prestigious corner of central France. Instead, he looked further afield to the vineyards of the south. There he found fewer restrictions and better-value land, which gave him the freedom to experiment and craft distinctive wines by coaxing out delicate flavours from grapes beyond Pinot Noir and Chardonnay.
Chais du Moulin is a beautifully pale rosé, mainly Grenache with a touch of Syrah – not unlike those you’d find from the finest Provençal estates.
Refreshing and vibrant, it brims with zesty citrus and red berry notes. Perfect as an apéritif, it’s also a great match with chicken, salads and seafood.
