Fragrant nose of lemon zest, cashew nut and struck flint. Tight and focused from entry to finish with lemon balm, oyster shell and a hint of buttery richness underneath. It a wild fermented and then spent 11 months in oak on lees before more time in stainless steel before bottling. Plenty of melon and light cashew with an understated stone fruit influence.
