Here, the monks of Saint Hilaire are said to have mastered sparkling wine methods in 1531, many years ahead of Dom Pérignon of Champagne fame. Their early success remained a local secret due to fragile bottles that didn't travel well. This appealing pink gains its salmon hue through the gentle pressing of Pinot Noir grapes – just like the finest Champagnes.
