The Wine

“Not your usual strawberries-and-cream rosé experience, although strawberries together with dark cherries and raspberries do figure here. No, this brings a little bit extra to the glass in bramble and hints of wild herbs together with peppery spice, musk and a touch of earthy savouriness. In 1920, wine lover Reg Purbrick was offered a glass of brandy from Château Tahbilk. Five years later, he purchased the property unseen! Reg's son Eric inherited his father's love of wine and, during the Great Depression, he gave up a law degree to decamp to Oz and take up the reins at Tahbilk. Three generations later, Hayley Purbrick is in charge of sustainability, while her father, Alistair, runs the estate. Since 1995, they've looked hard at sustainability and are just one of 8 wineries worldwide to be classified carbon neutral. Their 160 hectares of regenerated wetland and native vegetation are beneficial to the climate, as well as offering trails for all to enjoy.

Of this 2025 rosé, Sam Kim Wine Orbit writes, it is: “Charming and instantly appealing, the inviting bouquet shows watermelon, Gala apple, lemon peel, and floral nuances, leading to a finely flowing palate that's juicy and lively.
